This is one of my all time favorites recipes. It’s so easy to make and completely delicious! Plus it’s nice to be eating granola that doesn’t have all of the added sugars and junk that the store bought brands have. It’s super crunchy which I love and I always enjoy surprising my friends with fresh granola gift bags.
My recommendation is to serve it with @foragerproject or @kitehillfoods organic dairy-free yogurt, topped with fresh fruit and a touch of ? Otherwise it is also amazing just to have plain as a snack.
Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup hulled pumpkin seeds
- 1 cup hulled sunflower seeds
- 1 cup unsweetened coconut chips or flaked coconut
- 1 1/2 cups halved pecans (or nuts of your preference)
- 1/3 cup pure maple syrup
- 1/2 cup of extra-virgin olive oil
- 1/2 teaspoon Sea salt
- A few dashes of cinnamon
Instructions
Mix all ingredients in a bowl together. Spread out evenly on a baking sheet and place in oven for 45 mins stirring every 15 minutes to make sure everything gets an even golden brown shade. Remove from oven and season with sea salt and stir in dried fruit (I add cranberries). Voila!
