This is one of my favorite plant based dinner recipes. I was so worried I would feel deprived while I was trying plant based, but this totally proved me wrong. It was so filling and absolutely delicious.
Ingredients:
- 1 Yukon gold baked potato
- ½ cup black beans
- ¼ cup salsa of your choice
- ¼ – ½ avocado, cubed
- Earth Balance Buttery spread
- Daiya Cheese Shreds, Mozzarella style
- Salt and black pepper to taste
- Lime wedges for garnish
INSTRUCTIONS
- Preheat the oven to 450°F if baking the potato (rather than microwaving it).
- Pierce the potato with a fork a few times to allow the steam to escape. Bake in the oven for about 40 minutes, or microwave for 4 to 6 minutes, depending on the size of the potato. Pierce the potato with a fork or knife to check if it is soft and cooked through.
- When the potato is done, slice it open
- Smooth 1 tsp of Earth Balance Buttery spred over potato
- Layer on the black beans, salsa, avocado, and mozzarella cheese shreds. Season with salt and pepper, and squeeze over a bit of lime
- Enjoy!
